Pulled Pork Nachos

 1 bag of tortilla chips
 2 (large) cans refried beans
 250 g pulled pork (precooked)
 450 g Jack cheese (grated)
 ¼ cup sour cream
 2 tbsp fresh lime juice
 1 avocado (chopped)
 ¾ cup plum tomato (chopped)
 ½ cup sweetcorn
 ¼ cup pickled jalapeño
 ¼ cup fresh coriander

Preheat oven to 260°C.(500 F) Line a large rimmed baking sheet with aluminum foil. Arrange layers of chips, beans, pork, and cheese on prepared baking sheet. Bake in preheated oven until cheese is melted and chips are lightly browned, about 5 minutes.

Meanwhile, stir together sour cream and lime juice in a small bowl. Set aside.

Remove nachos from oven; immediately sprinkle with avocado, tomato, corn, jalapeño, and cilantro. Drizzle with sour cream mixture. Serve immediately.
